Mediterranean Slather Cheese Spread

Oh Baby, this is the Best Rendition of Pimento Cheese Spread you've ever tasted!!!











¼ lb +    Smokey Red Pepper Fontina, shredded * 

¼ lb +    Rustic Yellow Cheddar, shredded 

¼ lb +    Brie (rind removed-put in freezer for a bit) 

2 T +      Chef Gerrie Mediterranean Roasted Red Pepper Slather** 

1-2 T      Mayo 

1-2         Shallots, finely minced 

1-2         Garlic cloves, finely minced 

Salt & Pepper to taste 


Chef Gerrie’s Note* You can sub the regular fontina and add a 1/3 t of red chili flakes.  



  1. Freeze Brie cheese for about 15 minutes. This makes it easier to remove rind. Place in large mixing bowl to soften. 
  1. Shred Fontina & Cheddar cheeses. 
  1. Mix cheeses with the rest of ingredients 
  1. Serve with crackers, toasted/grilled bread, topping for hamburgers or finger sandwiches
