Easy Caribbean Twisted Coconut Ice Cream - Makes 1 1/2 Quarts

Well, normally I make my own custard for Ice Cream. But when you are grandmother and your grandson can’t wait…you have to

make exceptions. Well, I found on Amazon, Triple Scoop Vanilla

Ice Cream Mix. It’s fabulously creamy and you can add any special variations you want!

Ingredients:

1 pouch Triple Scoop Premium Vanilla Ice Cream Mix

1 C         Coconut Milk, Thai brand & stir well

1 C         Heavy Whipping Cream

1/2 C      Half & Half

1/2 cn     Coco Lopez, stir well (use the rest for a Pina Colada, lol)

1/2 C      Shredded Sweetened Coconut

1/4 C      Caribbean Roasted Yellow Pepper Slather, (reserve the rest for garnish)

1 bag      Dang Coconut Chips, sliced toasted coconut

Equipment:

Ice Cream Maker - Breville Smart Scoop Ice Cream Maker, the best ever. It has its own compressor…easy to clean…just push a button. Follow manufacturer’s directions.

Large Mixing Bowl & Whisk

Directions:

  1. In large mixing bowl, empty 1 pouch of ice cream mix and whisk together coconut milk, heavy whipping cream, half & half, and Coco Lopez.
  2. Add mixture to Breville’s smart scoop container with paddle. Push hard/gelato button option and away you go. The machine will “bing” to let you know when to add the shredded coconut and Caribbean Slather.
  3. Once the machine is finished doing its thing. Then scoop out and put in insulated tub for several hours…if you can wait that long…
  4. Scoop and drape with Caribbean Slather and garnish with Toasted Coconut
